Brian Arnoff, the chef/owner of Kitchen Sink Food and Drink in Beacon, announced he is opening Meyer's Olde Dutch at the Poppy's former location, 184 Main Street, in May. Paul Yeaple, who ran Poppy's, announced he was closing the burger joint last month.

Meyer's Olde Dutch will be a casual modern interpretation of the classic burger joint, Arnoff said. It will also have a full-service bar.

"It seemed like the right time to do it," Arnoff said. "When I found out Paul was looking to leave, I couldn't pass up on that opportunity."

Arnoff said he is committed to sourcing local ingredients. His beef will come from the Hudson Valley Cattle Company and cheese will come from McCadam Cheese, both based in New York.

"It's important to know where your product comes from," Arnoff said.

At Meyer's, Arnoff said he hopes to get creative, offering a vegan burger and a lamb jam.  Arnoff said the secret to a good burger is cooking it on a hot flattop grill.

"Our burgers are caramelized on the outside and juicy on the inside," Arnoff said.
